Jerk jackfruit tacos

INGREDIENTS

Jackfruit

1 (20 oz) can jackfruit

1/2 cup of vegetable broth

1/2 white onion

1 TSP thyme

3 Garlic cloves

1 - 2 tbsP Jerk Seasoning

1 Tbsp olive oil

1 tbsp Adobo seasoning/all-purpose seasoning

1 bag of small tacos

Toppings

1 (8 OZ) bag sliced red cabbage

1 (10 oz) container mango chunks

1 (1.5 oz) cilantro

1/4 green bell pepper

1/2 cup of vegan mayo

2 garlic cloves

1 tbsp lemon juice


INSTRUCTIONS

  1. Rinse jackfruit and then boil in water for 1 hour. Drain water and then boil for another hour. Rinse water and place jackfruit to the side. It is crucial that you boil your jackfruit to remove the brine/sour taste.

  2. Heat up olive oil in a pan on low heat. Once pan is hot, cook sliced onions, garlic and thyme for about 2-3 minutes. Place jackfruit on pan and season with Adobo or any all-purpose seasoning. Then place vegetable stock in the same pan. Cook down until all the stock has evaporated, which should take about 15-20 minutes under medium heat.

  3. Once the water is gone, cover jackfruit with jerk seasoning (you can add as much as you like). Proceed to bake in oven at 350° F for 10-20 min. Your jackfruit is ready now!

  4. Place jackfruit on tacos and add your desired sauce/toppings. I added red cabbage, sliced mangos, cilantro, white onions and green bell pepper.

  5. I made Vegan Garlic Aioli for a nice dressing but feel free to use whatever sauce/dressing you want. For the Aioli place vegan mayo, lemon juice and 2 garlic cloves in a blender. Add your desired seasonings. I added salt and paprika. You are now ready for dinner!
