Stuffed baked Potatoes
Stuffed baked potatoes are an easy, plant-based meal and great for meal prepping. You can also use sweet potatoes if you prefer. Add your favorite toppings for a beautiful, finishing touch!
INGREDIENTS
4 potatoes
3 tbsp olive oil
sprinkle of salt
1 tbsp black pepper
4 beyond meat plant-based sausages
1/2 white onion
3 cloves of garlic
1-2 tbsp cilantro
1/2 red bell pepper
2 tbsp tomato puree
1-2 tbsp adobo seasoning
1 tbsp cumin
1 tbsp paprika
1 tbsp cayenne pepper
1/2 cup of red kidney beans
2 tsp chipotle paste
1/2 cup vegetable stock
1 (7.1 oz) container of vegan cheese
1 (15.5 oz) container
instructions
Clean 4 potatoes and lightly coat with olive oil, salt and black pepper. place on a baking tray and bake it in the oven at 350°F for 1 hour.
Microwave 4 beyond meat sausages for 1 minute to ensure that it is soft and mask with a fork to create small pieces.
Heat up olive oil in a pan on low heat. Once pan is hot, cook sliced onions, garlic, and cilantro for about 2-3 minutes. Then place your mashed Beyond Meat Sausages, sliced red bell peppers and tomato puree in pan. Then add cumin, paprika and cayenne pepper. Stir well making sure that everything is mixed together.
Add red kidney beans, chipotle sauce and vegetable stock to pan. Stir well and then add adobo seasoning and black pepper. Cook for about 5-10 minutes.
Once potatoes are ready, remove from oven and slice each potato in half. use a spoon to scoop out potato filling. Be sure to save the inside of the potato for mashed potatoes or any other delicious potato meal. Add the ingredients in the pan to the potato and top with vegan cheese, salsa and cilantro. Dinner is ready!
