Vegan french toast

INGREDIENTS
French Toast
4 slices sourdough bread
3/4 cup coconut milk
1 banana
1 Tbsp maple syrup
1 tsp vanilla extract
1 tsp nutmeg
1 tsp cinnamon
1-2 tbsp vegan butter
1 tbsp olive oil
Toppings
1-2 tbsp maple syrup
1-2 tbsp powdered sugar
3-4 strawberries
2-6 blackberries
2-6 raspberries
instructions
Place coconut milk, banana, maple syrup, vanilla extract, nutmeg, and cinnamon in a blender to create your batter. Blend for about 20 seconds.
Place batter in medium container. Then gently place the bread in the batter fully coating it on both sides. Don't get it too soggy just coated nicely.
Heat up oil and vegan butter on pan on medium heat. Place bread on pan and cook each side for 2-3 minutes. Then add your favorite toppings. I added strawberries, raspberries, blackberries, powdered sugar and maple syrup. Brunch is finished!
