Vegan Rasta Pasta

INGREDIENTS

1 box penne pasta

1 tbsp olive oil

1 red bell pepper

1 green bell pepper

1 orange bell pepper

1 yellow bell pepper

3-4 spring onions

1 tbsp minced garlic

2-6 tbsp jerk seasoning

4 cups coconut cream

2-4 tbsp thyme

2-3 tbsp garlic powder

2-3 tbsp onion powder

2-3 tbsp paprika

2-3 tbsp adobo seasoning

2-3 tbsp black pepper

2-3 tbsp vegan cheese


instructions

  1. Place pasta in boiling water until it is al dente or to your liking. Drain water once it is finished.

  2. Heat up oil in a large pan on medium heat. Place green, red, orange, and yellow bell peppers in pan and cook for 2-3 minutes. Place minced garlic and jerk seasoning to pan. I suggest adding a little at a time and taste as you continue.

  3. Add coconut cream to the pan and mix well. Next, place thyme, garlic powder, onion powder, adobo, and paprika in pan. Then add your choice of vegan cheese. Mix thoroughly so the cheese melts and combines well. At this point, you can taste and add more jerk seasoning or any other seasoning if you would like.

  4. Add pasta to the sauce and mix well so that the pasta soaks up the sauce. Let it simmer for about 1-2 minutes. Top with parsley and dinner is ready!
